Delicious, Healthy Seasonal Recipes from the
 "The Barefoot  Cook"

This smoothie is great for an easy breakfast or quick snack.   It has all the fortifying elements you need – easy to digest protein in the cultured dairy, good fat from the coconut oil and egg yolk (which also includes lecithin), vitamins and anti-oxidants from the fruit,  and vitamins, minerals and fiber from the green energy food.

One of the most important elements of this drink is the powerful beneficial bacteria which inoculate your gut and perform all kinds of important functions. Good bacteria are your best natural defense and keep the bad bacteria, parasites, viruses, toxins and other pathogens in check.  For those of you that are not adapted to the sour taste of kefir or yogurt, this drink is a great way to make these healthy, healing foods that are rich in good bacteria and enzymes more palatable.

You can either buy kefir in the health food store or better yet, make your own.  To make your own kefir, simply mix room temperature organic, fresh milk (preferably raw) with kefir grains or powder.  Let kefir sit overnight at room temperature or for about 24 hours.  Place in refrigerator after your kefir reaches its desired sourness. If you are using kefir grains, you will then strain the kefir, add the grains back to the jar you are fermenting in and add fresh milk.

Continue the process by keeping it going. I highly recommend making this part of your daily routine. Please email me if you have trouble locating kefir grains at thebarefootcook@gmail.com

To your health!

Ingredients:

1 cup whole milk buttermilk, kefir, yogurt or coconut milk kefir

1 ripe organic banana and/or 1 cup fresh or frozen organic berries

2 Tablespoons Coconut Oil

2 Raw Egg Yolks – from pastured eggs

1 teaspoon Vanilla extract

2 Tablespoons maple syrup, raw honey, zylitol, agave or pinch of stevia powder or drops

1 tablespoon of organic Greens Powder

Instructions:

Place all ingredients in blender and blend until smooth. The coconut oil will harden if your ingredients are cold. Only use egg yolks if they are from fresh organic, pastured eggs.  Thin the smoothie with a little water if it is too thick for your liking. Enjoy!
