Any book buy the late Thomas Church is great. My Landscape Design- Texas Style book .  It is currently out of print. 

Unfortunately no universities teach organic techniques except for one horticultural class at Texas A&M taught by Joe Novak.  I hope to change this lack of formal education soon.
