Guide to choosing "Healthy" Chocolate for Halloween

When it comes to the customary Halloween problem of huge amounts of sugar entering our children in a short time frame, Dr. William Tamborlane's research on fiber and sugar has some practical applications. He found that total sugar intake does not correlate with changes in children's behavior -- but that the amount of sugar in relation to the amount of fiber does. So my trick is to get more fiber into kids on Halloween evening.

Before trick-or-treating, enjoy a big dinner together. Aim for whole grains, vegetables, and/or fruits. Minimize dishes made from processed white flour or sugar.

When kids return home from trick-or-treating, have them eat an apple before they dig into the sweets. Or slice a cool crisp apple, and have them alternate servings of candy with apple slices as they indulge. Happy Halloween to you and your family!

All across the nation, families are gearing up for Halloween as they welcome the same holiday traditions every year.  Like last year, costumes must me tried on, houses must be decorated, trick-or-treating routes must be panned.  But this year, families don’t have to participate in the tradition of sugar highs and candy binging.  Celebrity Chef, Mom and author of Mom-a-licious; Fresh Fast Family Food For The Hot Mama In You!, Domenica Catelli offers a few of her favorite Halloween recipes that kids and parents will love:

“Bloody Eyeball Soda"

Ingredients:  O Organics Blood Orange Soda, Leeches the Fruit, Raspberries

Instructions:  Mix together Blood Orange Soda, leeches and raspberries

Blueberry and flax Seed Smoothie

1 banana ;1 ½ cup pomegranate juice ; ½ cup plain yogurt (try affordable O Organics Plain Yogurt) ; 1 tablespoon ground flax seeds

Instructions:   Blend blueberries, banana, pomegranate juice, plain yogurt and lax seeds

Pumpkin Muffins
Ingredients:    1 cup whole wheat or whole grain flour; ½ cup white unbleached flour; 2 teaspoons cinnamon; ½ teaspoon nutmeg; 2 teaspoons baking soda; ½ teaspoon salt; 2 eggs; 1 ½ cups canned pumpkin; ¼ cup extra virgin olive oil ; 1 ¼ cups maple syrup; 1 tablespoon vanilla ;½ cup walnuts or pecans, chopped

Instructions:  Preheat oven to 350 degrees.  Mix dry ingredients together in a bowl.  In a separate bowl mix all wet ingredients.  Fold the wet ingredients, (and fold in nuts if using) into the dry ingredients and spoon into paper-lined muffin or greased muffin tins.  Bake for 20 minutes or when toothpick inserted comes out clean.  Remove to cool.
