Here is my experience with cooking grass-fed roasts. I have made two and they both turned out the same.

When you roast conventional meat it does become very tender but also falls apart. When I roasted grass-fed meat it didn't fall apart. This made me think it was going to be tough or stringy. Instead it was mouth watering and tender. In fact it wasn't stringy at all and was more like a very tender well done steak.

So if someone out there is not sure about diving into the grass-fed meats, try a roast for a special occasion. Your family or guests will be amazed that you can actually slice the meat and serve it without flopping it onto the plates.
