they started out out real well and appear healthy but the vegetable itself suddenly withered up after looking great. Any ideas what happened? I've been advised to allow the plants undergo some stress and see what happens.

Same as the cukes. Poor pollination is my guess. That's what prompted me to become a beekeeper a couple of years ago.
