I went to http://www.txsmartscape.com and found the following evergreen trees that are recomended for the DFW Metroplex area:

Afgan Pine
Arizona Cypress
Live Oak
Southern Live Oak
Southern Magnolia

They will all drop leaves/needles at one time or another and the live oaks will drop pollen "thingies" in the spring.

Don't use a magnolia!!!!! Even though it's "evergreen" they constantly shed their leaves..just never all at once. The leaves are large, stiff and never seem to decompose. You will always have them in your pool.

True about the Magnolia, also the branches grow too close to the ground to be a good shade tree.

Live oaks are fairly slow growers, but they add value to your home.

You may also want to try some smaller canopy trees. I was thinking some of the smaller oaks group(i call it the shin oak group) would work including lacey oak, vasey oak, mohr oak. I don't think mohr oak is all that popular in nurseries, but I would like to try it for myself.
