Sorry for this relatively silly question, but why are some places called "So & So's FARMS" and some are "Such & Such FARM". My daughter & husband want to name their acreage & have elected ME to research this. 'Farm' or 'Farms'? & why?

Purely personel choice.
Generally Farms is used for acreage east of the Mississippi River and Ranch is used west of Mississippi.
What ever you pick is correct.

Update-I wrote to the county ag extension office & they said there was no designated difference in 'farm or farms'. I'm disappointed-thought it would be something profound.
