It is so important to eat what is in season. We have lost touch with this knowledge since we can go to the grocery store and buy anything, anytime of the year. Spring is the time to clean - our houses and our bodies. Your body naturally 'spring cleans' trying to eliminate toxins and heaviness through mucus and drainage. You can help it along by eating seasonally or you can hinder it and be miserable with 'allergies' and sinus problems. Cut back on heavy dishes and large chunks of meat. Fresh fruits and vegetables in season are great for cleansing. Remember to always eat fruit alone or at the beginning of your meal for proper digestion.

Asparagus is in season right now and the season is short. It is loaded with vitamins and is a detoxifier and diuretic. It does not keep well, so eat it within a day or two of purchase. Even better, start a dedicated bed of asparagus in your yard (it takes a couple years to get established before you can harvest) but is delicious. Chives, in the recipe below, are another great addition to your garden and very simple to grow. They also grow well in a pot.

Here is a great dish for even those who do not typically like asparagus.

ASPARAGUS with CHIVES on PASTA

1/2 lb. angel hair pasta
1/2 cup heavy cream
1 egg yolk
3 Tbl. freshly squeezed lemon juice
2 Tbl. butter
1/4 cup freshly grated parmesan cheese
1 bundle of asparagus
2 Tbl. fresh chives, snipped into 1/4" pieces
fresh ground pepper

Cook angel hair pasta (about 5 minutes). Steam asparagus for 6 minutes(cut into 1" pieces down to where it breaks naturally). Melt butter into lemon juice on low, low heat. Beat egg yolk, add cream and stir into lemon/butter mixture. Add chives and cheese to mixture. Stir well. Add steamed asparagus to lemon/butter mixture and then stir into drained angel hair pasta. Garnish with fresh ground pepper and chives to taste.
