We have 2 red oaks in NE Texas planted in sandy/clay soil. About 16 year old trees we planted ourselves. Early this week, wife noticed that something is eating the leaves off right down to the stems. We are going to do the sick tree treatment today, but what type of insect is probably causing this and how do the attack the insect.

Sounds like tent caterpillars. Can you get up into the tree to look for large groups of them?
