 Post subject: Advice for 2 acre lot

Greetings,
My wife and I live on 2 acres in Caddo Mills, TX. We recently purchased 2 miniature donkeys, and 2 Blackbelly sheep. They graze on native grass/ weeds/ and round bales of coastal hay. I am planning on tilling 1 acre this fall and planting some sort of winter grass, and doing the other acre next spring for summer grass. Can anyone help with what type of grass would be most cost effective and drought resistant? Watering is not a problem, but would like something that does not need to be watered on a daily basis. Can you walk me through from the begining??? (soil testing, tilling, amendments, fertilizers, etc). I would like to be as organic as possible.
