Bark is being stripped from my nectarine and peach trees. I think it might be squirrels but I'm not sure. Does anyone have any knowledge about this and what can be done?

Do you have a digital camera so you can post some photos of the trees? Describe how large they are, did you plant them, how you water them. Are you sure the bark is coming off because of animals or might the trees be losing bark because of disease, insects, overwatering, etc?
