All breads and grains contain proteins, and they are excellent nitrogen sources for composting.
Don't believe everything that conservative or non-organic gardeners (or even gardening books) try to say or tell you about what is "legal" for composting.
Howard Garrett and Malcolm Beck both totally believe that you can compost anything that once lived!
When you compost in your own style and method, use your own judgment and use a lot of extra high carbon materials to cover up the potentially stinky or rotting high protein or high ammonia plant/animal materials.
Keep it moist and aerated and you will produce some super mature compost in a few months or longer.
