Which of the Organic Gardening centers n the Dallas area would carry the fiberglass moisture probe that the Doc often speaks of. My Water bill is too high!!!

Redenta's probably carries them. One of their locations is bound to be somewhat close to you. Call first to make sure they have it. Green Mama's is a great store, but it is a bit of a distance from Duncanville.
It would be worth the trip to Green Mama's though, should you wish to make the drive.
