Saw grass (if that is what it is really called) is obscuring my view to the lake in front of my cabin; two to four feet high and just enough in the water where I cannot reach with mower/trimmer or weed eater. How can I kill it or at least spray it down, organically of course?

My mother and dad used to fight it together. It grows in bunches. My dad would put on his armor and tie a rope around the base of it. Then he'd wrap the rope around it a few times to bundle its upright very tightly. Then mom would get in there with clippers to cut it off low. Tedious!! When she finished, dad would haul it all away in a bundle.
Once you get it down, you can rent a mower and mow it off. Or rent a tiller and chop it up.

He wrote to me off the list after I posted my idea. Apparently his saw grass grows in the water itself, not adjacent to it. So my ideal is sort of out the window.
