I have a friend who lives on a farm. I am trying to convince him to use organic fertilizer. He does not believe this is possible since he needs about a ton of it, literally. What do you suggest?

I suggest they call Sustainable Growth Texas or one of the other advertisers that work with farmers and ranchers to improve their soil.
Take a look at the videos on http://www.sustainablegrowthtexas.com/

Is your friend farming/ranching his land? What's he growing?
