Is there a book or something I can get that tells which perennials need to be cut back after flowers have bloomed in order to get more blooms, and those that shouldn't be cut back?

I would venture to say removing spent blooms - or dead heading - on most flowering perennials is advisable for repeat blooming. To name a few we dead head coreopsis, shasta daisy, copper canyon daisy, we shear back our salvias late spring etc and all do really well. I'm sure someone on this board would be able to recommend a book to you.
The best book I can think of is The Well Tended Perennial Garden: Planting & Pruning Techniques by Tracy Disabato-Aust and Steven M. Still.
Hope this helps,
Newt
