I want to get rid of Asian Jasmine. It is in a bed with bushes, but no other flowers.
Two Questions:
1. Is it safe to use Roundup to kill the Asian Jasmine - and is this the best approach? Will it kill the bushes, if the Roundup gets on the leaves of the bushes, or will it kill the bushes by being absorbed into the ground?
2. How easy is it to transplant some of the Asian Jasmine?

I wouldn't use roundup.
Aside from the controversy, why spend the money?
Spend that money on something you *want*!
Jasmine is easy to pull out, but if that's too hard, you can spray it with vinegar.
But the real solution to this situation is to post it on the Exchange portion of this forum, & get something you want in return for it!
I just received a big cardboard box of it from a gardener who had to thin out her beds.
All she did was loosen the soil around the roots & pull out the plant.
Out of probably 12 plants, which were "stored" (left in the cardboard box!) for several days, I've lost only 2.
