I'm new to organic gardening - last year first summer in Texas and it appeared snails were devouring some plants. Never noticed those in Oklahoma. Now what

Tell us about your organic program. What products have you used and how often? If you are using a good organic fertilizer and have not used any synthetic chemicals in a year, then you should have a population of toads that will eat the snails.
On the other hand, if you have cats around, you will not have toads. They don't play well together.
