We built a arbor (open slats) over our patio and would like to plant a vine or something to grow up the posts and onto the overhead for added shade and beauty. We do have dogs, so I'd be worried about Wisteria (heard it could make them sick to eat the pods).

Carolina Jessamine (Gelsemium sempervirens)
Confederate Jasmine (Trachelospermum jasminoides)
Cross Vine (Bignonia capreolata)
Sweet Autumn Clematis (Clematis paniculata)
Silver Lace Vine (Polygonum Aubertii)
Blue Passion Vine (Passiflora caerulea)
Virginia Creeper (Parthenocissis quinquefolia)

All of these should be pretty common at most nurseries in the area.

Yes, very full sun. I think we're going to go with the Cross Vine.
