Any book by the late Thomas Church is great. My Landscape Design- Texas Style book might help id you can find one.  It is currently out of print.  Unfortunately no universities teach organic techniques except for one horticultural class at Texas A&M taught by Joe Novak.  I hope to change this lack of formal education soon.
