Why does cheese go bad so fast? Is there a way to make it stay fresh longer?

I listened to an excellent discussion about cheese on Think on KERA-FM a few years ago and thought their advice about how to avoid cheese going bad was excellent - only buy as much as you need for a few days. This means buying smaller custom cut pieces, perhaps, but what you end up with is excellent cheese in good condition when you use it, and then you have the excuse to go buy more good cheese.

If you buy bricks of cheese make sure you don't handle it directly with your hands and slice be sure to it on a clean surface with a clean knife or cutter. Any part of the cheese you touch or that comes into contact with germs will act like agar in a science experiment.
