I'm on the east side of the DFW metroplex.

My lawn has cold weather weeds.

Correct me if I'm wrong, but because my Bermuda is dormant, I can spray with vinegar to kill the weeds without risking harming the Bermuda?

Yes, but be sure to use the vinegar on a warm sunny day when you do it. You can use 10% pickling vinegar (if you are so lucky to find the grocery store type at at a couple of dollars a gallon) or the high end feed store type (it doesn't need to be stronger than 10%).
