I'm going to need to rebuild my beds this winter as the wood is rotting. Is there stain I could use to make them last longer?

Choosing the correct wood to begin with makes a difference, staining rotting wood now is throwing away time and money on the stain and energy to paint it on. Try to avoid treated lumber or landscaping timbers, they are full of chemicals. Find old redwood (I have leftover planks from a decrepit picnic table I use for building around the yard) or western red cedar or bald cypress wood to use to make the raised beds. Or, for more durability, use recycled plastic lumber or bring in cinder blocks to form the outer edge.
