I would recommend you grow them under a black net so cut off the sun's scorching heat. Another trick I learned in college - never water in the hot sun, plants do all their growing after dark. You know, mother nature waters in the evening and after dark.
As for me, I grow my zucchinis in pots so that I can move the pots to a more shady area when the heat is too intense outdoors.
