I have an unlevel backyard, with a mixture of bermuda, St. Augustine and weeds. What is the best way to level it out and make the grass better. Should I till it up with the grass and everything and plant from there? I have no idea what would be best. Thanks for your help.

First, read the FAQ at the top of this forum or in the Lawns forum. That will help with making your lawn better with less bermuda and weeds.

As for leveling, let's determine where you are. Does your landscape drain rainwater away from the buildings? If not, then you need a redo. If water flows toward the house or stands in huge puddles, you need drainage. Call a finish grader to regrade your entire landscape. This will tear up everything including sprinklers, so you will be starting over from square one.

If you don't have that problem, then I use sand to level the low spots in my lawn. Every time you mow take a bucket of sand out with you. When you hit a low spot, dip into the sand and lightly sprinkle some into and around the spot. Try to make it even and not in piles. You should be pretty level in a month or two.
