Crispy Pecans Recipe
Here's one of the easiest and best recipes for a healthy snack. Crispy pecans are explained in Sally Fallon’s Book, Nourishing Traditions. I also use it with walnuts, almonds, and other nuts. Almonds are actually my favorite.
The wonderful buttery flavor of the nuts is enhanced by soaking and slow over-drying. Mix the nuts with salt and enough filtered water to completely cover the nuts. Then leave them in a warm place for at least 7 hours or overnight. Drain and rinse in a colander.
Spread the nuts on a stainless steel baking pan and place in a warm oven (150 to 170 degrees) for 12 to 24 hours, turning occasionally, until completely dry and crisp. I usually coat the baking pan with real butter, by the way. And you might try adding a little cayenne pepper (1 teaspoon) to the liquid soak.
Store the finished product in an airtight glass container and enjoy a delicious and healthy treat often.
